My best recommendation is to share it around and eat it just after you buy it! This way, there's no storing needed.
But if you can make the pleasure last, then keep in mind that nougat does not like humidity which makes it more sticky, whilst excessive heat can cause nougat to melt.
It is best stored in its packaging in a cool, dry place, between 14-16ºC.
Once opened, wrapping your nougat in waxed paper is a good idea to prevent sticking, then store in a sealed container in a cool dry place.
During an especially hot summer in the south of France, I have been known to store my nougat in an airtight container in the bottom drawer of my fridge to stop it from melting (best to avoid humidity though, so only in extreme circumstances). The same goes for extremely humid days here in New Zealand.
Then just leave your nougat out for 10 min or until it has softened a bit before you eat it.
I know, it will be a long wait but oh so worth it!
Once you remove the outer packaging (foil and/or wax paper), you don’t need to remove the paper you see on your piece of nougat.
The paper is perfectly edible. It's wafer paper made from potato starch, water and olive oil.
There’s very little flavour to wafer paper and it's commonly used for nougat. It not only helps to keep the moisture away from the soft meringue, but also helps to savour a nougat piece without getting sticky fingers.
The wafer paper is the same paper that would be used in churches, also used for flower decorations on cakes or for edible paper printed with edible inks.
We're certain that once you start eating your nougat, you'll finish it well before the best before date we added to your nougat packaging.
If you've resisted opening your bar, just doublecheck the best before date on your nougat packaging for a guide as to its freshness.

I currently don’t do vegan or sugar free nougat.
Although there is generally no gluten in most of our nougat, I work in a kitchen where I also make cookies so I cannot guaranty a gluten free nougat.
Yes, we do, and it's all wrapped beautifully with a bow.

Our nougat has NO nasty additives or preservatives.
But it does contain allergens.
The list below shows the allergens you are likely to find throughout our nougat range:
- tree nuts (Almonds, Pistachios, Macadamia, Walnuts, Hazelnuts)
- some of the chocolate we use contains NZ milk powder and soy
- egg whites
- sesame seeds
- wheat (only in our pretzel nougat)
And although there is generally no gluten in most nougat, I work in a kitchen where I also make cookies so I cannot guaranty a gluten free nougat.
Specific details are available for each flavour on your nougat packaging as well as on our website with each product description.
